Using top-quality Wagyu beef rigorously selected from all over Japan by the wholesaler, Yazawa Meat, he prepares it using the optimal method for the condition of the meat on that day. He has developed a unique "Meat Yazawa style" that involves more than just sourcing premium-grade beef; it also entails carefully calculated decisions on the cuts of meat used and the kneading process (for Japanese-style hamburger steaks), as well as cooking times. He has played a key role in elevating Japan's Wagyu cuisine into an internationally renowned gastronomic phenomenon.
