A renowned restaurant conveying the essence of shojin cuisine over four generations showcases its traditional techniques. The “Special Chilled Ramen (Hiyashi Chuka),” devised specifically for this event, is a surprising bowl that maximizes the umami of the ingredients. Alongside it, the event-exclusive “Chilled pickled cucumber on a stick” makes an appearance. It is a special dish where Tokyo’s historic techniques harmonize with seasonal bounties.

This chef is the fourth-generation owner of “Shojin Cuisine Daigo," a venerable establishment with over 70 years of history. His unique background includes training in French restaurants, working as a bartender, and earning certification as a sommelier. In addition to being featured in the Michelin Guide Tokyo for 19 consecutive years since 2007, the restaurant was newly awarded a “Michelin Green Star" in the 2025 edition in recognition of its proactive commitment to sustainable gastronomy.
