Hideki Irie

This owner-chef previously operated Men Gekijo Gen'ei in Fukuoka, Kyushu and now runs the membership-based "ramen kaiseki" restaurant GENEI.WAGAN in the Hiroo district of Tokyo. Having developed his own original concept of ramen served as a high-end kaiseki meal within a theater-like atmosphere, he has frequently appeared in the media both in Japan and overseas. He plays a leading role in Tokyo's culinary culture as a chef who has merged tradition with innovation and tells a story with every bowl of ramen.
