Mamoru Nishibori

Unana's owner-chef is an artisan who perfected his grilling technique through long training at a well-established unagi (eel) restaurant. He is dedicated to maximizing the unagi's innate umami flavor, with an utterly uncompromising approach to everything from controlling charcoal temperature to skewering technique. Alongside preserving tradition, he takes a creative approach to ensuring ease of eating and innovative presentation, attracting new customers among the younger generation. He is a chef with proven skills and passion who has created a restaurant that people line up to experience.
