 Committed to bringing out the fullest flavor of eel, he pays meticulous attention to charcoal temperature control and grilling techniques.
 While honoring traditional methods, he continually refines the dining experience and serving style, operating a highly popular restaurant in Asakusa—one of Tokyo’s most competitive eel districts—and earning strong support from younger generations as well.
His signature item, “Grilled Rice Ball with Domestic Eel,” introduces a new way to enjoy eel in the food-walk culture of Asakusa.
 Preserving the traditions of Kansai-style grilling while proposing fresh and modern ways to appreciate eel, he is a craftsman driven by both exceptional skill and genuine passion.
