Having first established his career in Nagoya, this owner-chef moved to Tokyo in 2017. He thoroughly analyzed tempura-making from a scientific perspective and developed his own technique of steam-cooking ingredients in oil while assessing their water content. The tempura that results from this uncompromising pursuit attracts gourmets from around the world, with reservations booked months in advance. He continues to expand the horizons of Japanese cuisine as a tempura pioneer representing Japan internationally.
