After graduating from culinary school, the owner-chef joined the prestigious “Nadaman Honten Sazankaso," driven by the belief that he must “experience the absolute best in everything, from tableware to ingredients and service." After further honing his craft at Japanese restaurants in Tokyo hotels and a kappo establishment in Kagurazaka, he opened “Kappo Funyu" in 2011. Building on the impeccable techniques cultivated at these renowned institutions, he serves delicate dishes that fully draw out the natural flavors of the ingredients. He has created a hidden gem of a kappo restaurant that true gourmets visit time and again.
