After honing his craft at an auberge in the Tateshina Highlands and gaining valuable experience in the meat, fish, and vegetable wholesale industry, the chef opened "Auberge Espoir" in Tateshina, Nagano, in 1988. Serving as the Representative Director of the Japan Gibier Promotion Association, he is widely celebrated as Japan's leading pioneer of gibier (wild game) cuisine, continuously championing its rich value and appeal. His unwavering dedication to popularizing local ingredients and advancing food education has earned him high acclaim both domestically and internationally. His culinary philosophy—expressing the beauty of natural ecosystems on a single plate—continues to profoundly inspire countless culinary professionals.
