This owner-chef is a leading pâtissier who trained in the renowned French bakery Ladurée and the world-class Hôtel Plaza Athénée, as well as honing his skills under the tutelage of Pierre Hermé. In 2006 he opened Pâtisserie Cacahouète Paris in Nakameguro. His technique of infusing traditional French pastries with modern touches and elements of surprise is highly acclaimed both in Japan and abroad.
