The restaurant recreated the "Edo Tsuyu" (miso-flavored noodle soup) from the Edo era! In the old days in Edo, soy sauce was so precious that people used to eat soba noodles dipped in miso mixed with grated Japanese radish soup. It was not only one of the most nutritious foods, but it was also believed to lead to a healthy body. Please enjoy it with the flavor of Nihachi soba (a blend of 20% wheat and 80% buckwheat) made with domestically produced Gensoba.
