This is the chef in charge of the kitchen at Ichiou Ginza, where he is perpetuating the legacy of the original Ichiou, a long-established restaurant in Nagoya that boasts a history spanning 70-plus years. Drawing on his in-depth knowledge of Nagoya Cochin, which ranks first among Japan's top three local chicken breeds, he has established a reputation for his artisanal skill in making the most of the breed's firm yet tender texture and rich flavor. From his kitchen in Ginza, he continues to share Japan's proud tradition of chicken cuisine, with an uncompromising approach to ingredients, as well as secret sauce recipes and optimal cooking temperatures.
