Haruyuki Yamashita

Owner and Executive Chef of HAL YAMASHITA, born in Ashiya, Hyogo Prefecture. Growing up in Kobe exposed him to diverse cultures from an early age. He trained worldwide to develop a culinary perspective that transcends mere technique and knowledge. His innovative approach of incorporating unexpected ingredients into traditional Japanese cuisine has pioneered a new genre known as “Shin-Washoku” (New Japanese Cuisine).
